- The Excise Officer authorised by the Commissioner shall deliver to every brewer a book in which the brewer shall enter in the proper columns at least twenty four hours before beginning to mash any malt, etc. or to dissolve any sugar, the day and hours of brewing. With the date of making the entry at least two hours before the time entered for mashing or dissolving, he shall enter separately the quantity of malt and unmalted corn, rice, rice grits, flaked rice, maize, maiz grits, flaked maize and other similar preparations and of sugar to be used, and the hour when all the worts will be drawn off the grains in the mash tuns.
